Amazing No Fail One Minute Mayonnaise

Watching how to make one minute mayonnaise the first time absolutely blew my mind. This home made mayonnaise is now an absolute staple in the ThisGuyCooks household and is so easy to blend with different flavours!

One Minute mayonnaise

So I’m a huge fan of Masterchef Australia. It’s easily one of the best cooking shows of all time. I’ve watched most of the series at least twice. Even ones from nearly a decade ago (makes me feel totally old) I still watch every now and again and learn so much from them! The show has three judges, Gary Meghan, George Collambaris and Matt Preston. Each week they would complete a “masterclass” for the contestants, teaching them staples for each cooks repertoire. This one minute mayonnaise recipe was inspired by Matt Preston’s lesson on how to make home made mayonnaise quickly and easily!

What is home made mayonnaise?

Mayonnaise is a thick and creamy sauce or condiment made from oil, eggs, lemon juice or vinegar and seasonings. It’s super easy to adapt and blend into different varieties. Maybe you’re having peri peri chicken and fries and a peri peri mayo should be on the table? Or perhaps you’re eating Mexican and your tacos are just screaming out for a hot and smoky chipotle mayo. It’s SO versatile that just an addition or two to this base mayonnaise recipe is all it takes.

Traditionally, mayonnaise is made with just the egg yolks in a food processor and can be a bit of a laborious task. Sometimes it works and sometimes it doesn’t. Split mayonnaise is no ones friend in these instances! This recipe however is a no fail mayonnaise recipe that uses a whole egg.

How do you make one minute mayonnaise?

All you need is a large container and a stick blender. Most good stick blenders come with a tall measuring jug that is just perfect this. In this jug, add a whole egg (be very careful not to break the yolk), a tablespoon of Dijon mustard, a tablespoon of lemon juice or vinegar and a pinch of salt. Pour about 300ml of a neutral cooking oil. I like to use rapeseed oil. Its pretty flavourless but gives a nice colour!

Placing your stick blender so that the blades fully cover the yolk, start to blend. You’ll immediately see a thick white mayo begin to form. Keep it blending at the bottom for 30 seconds and then slowly pull the stick blender up. The oil will transform into a beautifully emulsified mayonnaise that you can eat straight from the jug.

Once the mayo has emulsified, add some more seasonings to taste (I’m sure it will need it). I usually add garlic powder to make it a really gorgeous home made garlic mayonnaise. You could also add an extra yolk to make it super rich and indulgent.

No Fail One Minute Mayonnaise

My mind was blown the first time I saw this made, and I've never looked back. A super versatile no fail mayonnaise thats ready in just one minute!

Ingredients

  • 1 egg
  • 300 ml Neutral Flavoured Oil
  • 2 tsp Lemon Juice or Vinegar
  • Salt to taste
  • 1/2 tbsp OPTIONAL: Garlic Powder

Instructions

  • Chuck everything in a tall jug that you can use a stick blender with. Be careful not to break the yolk of the egg. If you're adding garlic powder, add it in here.
  • Using a stick blender, position the blades to be just over the yolk, again being careful not to break it. When you're ready start the stick blender but keep it at the bottom. You'll see it begin to emulsify and turn white.
  • After about 30 seconds, pull the stick blender up whilst still whizzing. The whole jug will turn into gorgeous Mayonnaise!
