Heat a large frying pan over a medium low heat
In a large bowl mix together the eggs, sugar, vanilla bean paste, cinnamon, salt , whole milk and single cream. Don’t over whisk this, just a loose combination is great.
Add your butter to the frying pan and spread all over the pan
Whilst the butter melts dip your slices of brioche in your cream mix. You don’t want to over soak the bread just an in, turn and out! Add flat straight to the frying pan. Do this a portion at a time, so In this instance, 3 slices in the pan at any time.
Cook for 1 min each side or until each side is golden brown.
Place in the centre of a large plate. Add your berries,sprinkle with icing sugar and drizzle maple syrup to your hearts content.
