No Fail One Minute Mayonnaise

My mind was blown the first time I saw this made, and I've never looked back. A super versatile no fail mayonnaise thats ready in just one minute!

  • 1 egg
  • 300 ml Neutral Flavoured Oil
  • 2 tsp Lemon Juice or Vinegar
  • Salt to taste
  • 1/2 tbsp OPTIONAL: Garlic Powder


  • Chuck everything in a tall jug that you can use a stick blender with. Be careful not to break the yolk of the egg. If you're adding garlic powder, add it in here.
  • Using a stick blender, position the blades to be just over the yolk, again being careful not to break it. When you're ready start the stick blender but keep it at the bottom. You'll see it begin to emulsify and turn white.
  • After about 30 seconds, pull the stick blender up whilst still whizzing. The whole jug will turn into gorgeous Mayonnaise!
